This is Chilindrina made with all fresh ingredients: cabbage, tomato, avocado, salt, pork skin, valetina, sour cream and flour chicharron. And some fresh watermelon, pineapple, banana & strawberry on the side.
Top left is the owner, Erasmo. It turns out he’s an avid cyclist (and former triathalete) and he’s going to ride with me when I leave town tomorrow morning! (He may even bring some friends). He also said he’s bringing me a neck cooler that you keeps you cool in the hot sun when you soak it in water.
Erasmo is a really cool fellow. He’s originally from Mexico and has had this little Mexican “treat” shop here in Brownfield, Texas for 7 years. They serve ice cream, flavor ice and a few fresh dishes. I’m so glad I stopped in! 😊
